The Thalys "Red Train" is the best way to travel between Amsterdam, Brussels and Paris. Be aware: Trains do fill up early especially during the spring-summer.You must book tickets in advance.

I've taken Thalys Paris/Amsterdam 100 times when I lived in Paris. The trains are clean, comfortable and nearly always on time.
Tip: First class really isn't much better than economy class. Buy 2nd class tickets if they are available.
Food & Drink: Most trains have a food car that serves a limited menu. Beer and wine along with soft drinks are served at a reasonable price. The sandwiches are not bad. I suggest buying food at the falafel stand outside Centraal Station in Amsterdam, or any of the food vendors in Paris' Gare du Nord.
